Sunday Morning Scrambled Eggs and Salmon

We all know that feeling when Sunday morning rolls around and there’s the beautiful smell of breakfast wafting through the air, and for me that makes me want to whip up some scrambled eggs and salmon.

In keto many people simply bounce between bacon, burgers  and cheese – but I’m here to remind you again that variety is key. Fish, including shellfish, have long been constituents of the human diet and our bodies have learnt to derive certain essential nutrients and minerals from these food sources.

Salmon integrates incredibly well with the ketogenic diet, as in addition to omega-3 fatty acids, salmon also contains what are known as bioactive peptides which have in many cases, been shown to improve insulin management, joint cartilage health, and reduce inflammation in the digestive tract.

However, today we are simply cooking up some scrambled eggs and salmon. Let’s get into it!

Sunday Morning Scrambled Eggs and Salmon

Ingredients

  • 6 Eggs
  • 150mL Thickened Cream
  • 1 Tbsp Olive Oil
  • 20g f Dill (Dill is amazing in this recipe, do try to get this ingredient!)
  • 100g Smoked Salmon
  • Pink Himalayan Rock Salt
  • Black Pepper
  • Grass-fed Butter

NOTE: Many generic brands of butter here in Australia do actually use grass-fed cows to source their product, yet surprisingly, not all brands advertise this fact in large print! Read the labels of the butter offerings at your local supermarket and you may be able to snag some grass-fed butter at a bargain.

Preparation

  1. Whisk 3 whole egg yolks with cream and a tablespoon of olive oil
  2. Add a seasoning of salt and pepper while the ingredients are being mixed.
  3. Finally in this stage finely chop the dill and add to the mixture.

Cooking

  1. 20g of butter onto a fry pan at high heat
  2. Pour the egg mixture into the pan, and fold the mixture as it slowly heats in a criss-cross pattern
  3. Remove the scramble when the mixture is cooked and slightly moist.

Serve

  • Place the salmon on a plate, and onto it crack fresh salt and pepper.
  • Serve the eggs on the well-placed salmon, and top with a sprig of dill.

Dash some olive oil across the top and you’re done!
