Oven-baked Stuffed Mushrooms


Yeah, ok, – I get it. They’re really not that good looking; but these oven-baked stuffed mushrooms are perfect snacks whose macros will make any keto enthusiast smile.

In our stuffed mushrooms we squeeze in some amazing flavour combinations too; the fresh mint and parsley will really help to make this dish sing for you too.

Oven-baked Stuffed Mushrooms

Hint: Visit your local green grocer, and delicatessan for the ingredients listed below;

  • 1 tbsp of mint, finely chopped
  • 1 tbsp of parsley, finely chopped
  • 25g Grass-fed butter
  • 25g Ricotta cheese
  • 1 tablespoon tomato paste
  • 2x 4″ Field mushrooms
  • 10g Parmesan cheese, shaved

You know I say it a lot – but I really mean it. Step 1: Combine

  1. Put the cheeses, and butter into the a food processor.
  2. Add the parsley and mint and blend for a few more seconds.

Step 2: Fill

  1. Remove the centre stalk from mushrooms.
  2. Spread the tomato paste across the inside of the mushroom.
  3. Stuff the mushroom with cheese mixture until full.

 Step 3: Grill

  1. Preheat oven to moderate heat.
  2. Bake in oven for 5-10 minutes.
  3. Remove and grate parmesan on top.

Grill further until the cheese is then golden brown!

Easy as. BANG!
