Tomato, Eggplant, and Feta Egg Bake

Feta egg bake. Even saying the words makes my mouth water.


Egg white protein scores a whopping biological index value of 100; which translates to: egg-white albumen and proteins being very readily absorbed by the body whilst also being a complete, natural protein source.  Egg protein contains all of the essential amino acid, in addition to B Vitamins, antioxidants, and trace minerals such as selenium.

Enough about the science however, in this recipe I pair versatile eggs with tomato, eggplant, and feta, to bring together savory bake together in no time.

Remember, if the cheese and yogurt don’t match your goals or macros, you can adjust this recipe to suit your needs! Not everybody can digest the proteins found in dairy so easily, but also the types of fats that you might be eating for performance and body composition goals can vary in their mono- and polyunsaturated ratios.

Tomato, Eggplant, and Feta Egg Bake


  • 3 Free-range eggs
  • 375g Canned tomatoes
  • 100g Eggplant
  • 1 tbsp Cumin
  • 1 tbsp Paprika
  • Feta Cheese (Optional)
  • Greek Yogurt (Optional)
  • Grass-Fed Butter

Remember to always try to source an affordable organic, free-range, wild caught and grass-fed products where available.


  1. Find a suitable bake pan or tray, aim for roughly 20cm in diameter with tall sides.
  2. Cube the eggplant into approx. 1cm cubes.
  3. Fry in 20g of butter in a fry pan, until soft.
  4. When ready and golden brown, place the eggplant into the baking pan.
  5. Then add the tomatoes, a pinch of salt and pepper into the tray next followed by the spices cumin and paprika also, blending well.

Place the completed mixture in the pan, into the pre-heated oven at 180°C for minutes.


  1. Crumble 30 grams feta cheese atop the hot mixture,
  2. Followed by cracking the three eggs into the pan, over the bake.
  3. Return the pan to the oven for a following 10 minutes, or until the eggs are cooked and cheese melted.
