Eggplant and Haloumi Stack with Tomato and Feta Crush

A bit about the recipe…
Eggplant is full of fiber. Haloumi is a great source of fats and proteins. During and after keto adaption our bodies need food like this to promote a healthy keto balance. This recipe is easily prepared in the morning as a hot breakfast that’ll keep you going through the morning.
Make sure to source a quality haloumi and read the labels to avoid cheap/highly processed brands from chain store, by buying from your local delicatessen where you can.
Eggplant and Haloumi Stack with Tomato and Feta Crush
Ingredients
- 100g Haloumi (Good quality, imported from Cyprus, Greece or from a local delicatessen)
- 40g Grass-Fed Butter
- 1 Eggplant
- 30g Feta (any Feta is fine, we used Greek on this one)
- 2 tbsp Tomato paste
- Extra virgin olive oil
- Pink rock salt and fresh cracked pepper
Preparation
- Chop up three 1cm thick eggplant slices
- Slice two haloumi slices, about the same thickness
Method
- Butter into a hot pan, followed by eggplant, pinch of salt – and another 20g of butter.
- When she’s golden brown, off the heat and onto a plate.
- On goes another 20g of butter! Shallow fry the haloumi until done and set aside.
- Stir and crush the tomato paste, olive oil, feta cheese, and another pinch of salt in the saucepan.
- When the cheese has melted and created the sauce, set aside.
Serve
This one’s pretty straightforward guys. Place a slice of eggplant then haloumi, and so on – crowning your masterpiece with your amazing crushed tomato and feta paste!
